Ingredients

  • 1/2 cup Dry Fruits (cashew nuts, badam and raisins together)
  • Tutty Fruity (little)
  • 1 cup Basmati Rice
  • 1 cup Coconut Milk
  • Ginger (a small piece, finely chopped)
  • 3 cloves Garlic (chopped)
  • Green Chillies (chopped)
  • 1 Onion (big, finely sliced)
  • 1 Cinnamon
  • 1 Cardamom
  • 1 Cloves
  • Coriander Leaves (small handful, chopped)
  • Ghee as required
  • Salt as per taste

Instructions

  • Heat a pressure pan over medium flame.
  • Pour the coconut milk with 1/2 cup of water.
  • Add the basmati rice and cover with a lid.
  • Cook till 1 whistle and remove.
  • Heat a pan over medium flame.
  • Add 1 tsp of ghee and fry the cashewnuts and badam.
  • Switch off the flame and add the raisins.
  • Fry for 20 to 30 seconds and remove.
  • In a separate pan, add a little ghee.
  • Fry the cinnamon, cloves and cardamom for 30 seconds.
  • Add the ginger, garlic, green chillies and stir-fry for another 30 seconds.
  • Add the onions, fried cashews, badam and raisins.
  • Stir well and add the tutty fruity.
  • Add a little salt and stir to mix well.
  • Add this on top the cooked rice and mix well.
  • Garnish with coriander leaves.
  • Serve hot.
