Kuragayalu Upma

Ingredients:
Onions – 2, finely chopped
Curd – 1/2 cup
Curry Leaves – 5
Coriander Leaves – handful, chopped
Salt as per taste
Turmeric Powder – a pinch
Mixed Vegetables – 1/2 cup, chopped
Tomato – 1, chopped
Fine Rava – 1 cup
Water – 1 1/2 cups
Juice of 1 Lime

For Seasoning:
Oil – 1/2 cup
Urad Dal – 1/2 tsp
Mustard Seeds – 1/4 tsp
Cumin Seeds – 1/4 tsp

Grind to a Powder:
Equal quantities of Ginger, Garlic, Coconut and Cloves

Method:
1. Heat oil in a heavy bottomed pan.
2. Fry the seasoning ingredients.
3. When mustard seeds start to spluter, add onions, curry leaves, chopped green chillies, 1 tblsp ground powder, turmeric powder and salt.
4. Cook for 5 minutes.
5. Add the chopped mixed vegetables and tomato.
6. When the vegetables are half cooked, add the rava, 1 1/2 cups of hot water and curd.
7. Cook for 4 to 5 minutes till the liquid is absorbed.
8. Ensure the mixture is dry and not soggy.
9. Add coriander leaves, salt and lime juice.
10. Remove from fire.
11. Serve hot as breakfast or tea time dish.
