Ingredients:
Eggs – 4
Onions – 3, chopped
Tomatoes – 2, chopped
Ginger – 1 inch piece, crushed
Garlic – 12 to 15 cloves, depending on size, crushed
Red Chilli Powder – 1/2 tsp
Turmeric Powder – 1/4 tsp
Saunf – 1/4 tsp
Mustard Seeds – 1/4 tsp
Curry Leaves – a bunch
Coriander Leaves – a bunch
Oil – 4 tsp
Salt as per taste
Method:
1. Break the eggs into a bowl.
2. Add salt and whisk well.
3. Add 1 chopped onions and mix.
4. Heat a tawa over medium flame.
5. Add a little oil and spread evenly.
6. Pour a small ladleful of the egg mixture and make omelettes.
7. Cook on both sides and remove. Keep warm.
8. Heat oil in a pan.
9. Fry the mustard seeds and saunf for 30 seconds.
10. Saute the ginger and garlic until golden.
11. Add the onions and curry leaves.
12. Add turmeric powder, red chilli powder and salt.
13. Stir and mix well.
14. Pour 1/4 cup of water and cook until it starts to thicken.
15. Now add the prepared omelettes and gently stir for 3 to 4 minutes or until the omelettes are well coated with the masalas.
16. Garnish with coriander leaves.
17. Serve hot.
