Savoury Stuffed Omelette

Chicken – 150 gms, boneless and ground
Cherry Tomatoes – 3 tblsp, diced
Green Peas – 3 tblsp
Oil – 1/4 cup
Onion – 2 tblsp, minced
Sugar – 2 tsp
Fish Sauce – 1 1/2 tblsp
Black Soy Sauce – 1/4 tsp
White Pepper Powder – 1/4 tsp
Eggs – 3, beaten

To Garnish:
Coriander Leaves – 2 sprigs
Red Chilli – 1, finely sliced

1. Heat 1/2 the oil in a pan over high heat.
2. Stir fry the chicken for 2 minutes.
3. Add the diced tomatoes, green peas, onion, sugar, fish sauce, soy sauce and pepper powder.
4. Fry for 2 to 3 minutes until cooked.
5. Keep aside.
6. Heat a small pan add 1 drop of oil.
7. Pour a ladleful of the beaten egg to make a thin omelette.
8. Cook till its lightly brown on both sides, turning it over halfway.
9. Place 2 tsp of the cooked chicken mixture in the centre.
10. Fold two opposite sides towards the centre.
11. Fold in the remaining sides so that is resembles a square.
12. Transfer to a serving plate.
13. Garnish with red chilli and coriander leaves.
14. Serve as a starter.
