Orange Sesame Chicken

Ingredients:
Chicken – 1.5 kgs, chopped into bite sized pieces
Orange Juice – 1 1/2 cups
Vinegar – 1/2 cup
Soya Sauce – 1/4 cup
Brown Sugar – 2 tblsp
Cornstarch – 4 tsp
Garlic – 4 cloves
Ginger – 2 tblsp, chopped
Red Capsicum – 3 tblsp, finely chopped, seeds removed
Carrots – 1 cup, sliced
Green Peas – 4 cups
Celery – 1/2 cup, chopped
Oil as required
Salt as per taste
Sesame Seeds as required
Black Pepper Powder as per taste

Method:
1. Whisk the orange juice, vinegar, soya sauce, brown sugar and cornstarch in a bowl until smooth.
2. Heat 2 tblsp oil in a pan over medium flame.
3. Add the chicken pieces, garlic, ginger and red capsicum.
4. Cook for a few minutes until the chicken starts to change colour to brown.
5. Remove and transfer to a plate.
6. To the same pan, add 1 tblsp oil.
7. Saute the carrots and celery for 2 to 3 minutes.
8. Add the chicken and green peas.
9. Reduce flame to low and add the orange juice mixture.
10. Cook for 5 minutes.
11. Add salt and black pepper powder.
12. Stir well.
13. Sprinkle sesame seeds on top and remove to a serving plate.
14. Serve hot with cooked rice.
