Ingredients:
Paneer – 250 gms, diced
Oil or Butter – 1/2 cup
Cumin Seeds – 1 tsp
Green Chillies – 1 tblsp, chopped
Garlic-Ginger Paste – 2 tsp
Tomatoes – 1 cup, grated
Salt to taste
Turmeric Powder – 1/4 tsp
Red Chilli Powder – 1/2 tsp
Chaat Masala – 1/2 tsp
Garam Masala – 1/2 tsp
Potatoes – 1/2 cup, diced
Carrots – 1/2 cup, diced
French Beans – 1/2 cup, diced
Cauliflower – 1/2 cup, diced
Peas – 1/2 cup, fresh or frozen
American Corn – 1/2 cup
Water – 1/2 cup
Milk – 1/2 cup
Cheese – 1/2 cup, grated
Cashew Nuts – 1/2 cup, chopped
Coriander Leaves – few, chopped, to garnish
Method:
1. Heat the oil in a kadai.
2. Fry the paneer till golden brown.
3. Remove and keep aside.
4. Add the cumin seeds and green chillies, then add the garlic ginger paste and saute for 1 minute.
5. Stir in the tomatoes, season with salt, turmeric and chilli powders, chaat and garam masalas.
6. Stir in the vegetables, then add the water, cover and simmer for 5 minutes or till the vegetables are tender.
7. Remove the lid, cook on high heat for 1 minute.
8. Add the milk, cheese and cashew nuts along with the paneer and mix to get well coated.
9. Transfer to a serving dish.
10. Garnish with coriander leaves and serve hot.
