Vegetable Kurma

Ingredients:
Potatoes – 3
Carrots – 3
French Beans – 100 gms
Cauliflower – 100 gms
Tomatoes – 2
Ginger Garlic Paste – 1 tbsp
Onion – 2
Curry Leaves – 8
Raisins – 1/2 cup
Chilli Powder – 2 tsp
Garam Masala Powder – 2 tsp
Turmeric Powder – 1 tsp
Cumin Seeds – 1/2 tsp
Mustard Seeds – 1/2 tsp
Sugar – 1 tsp
Coriander Leaves – 1 cup
Oil – 100ml
Salt as per taste

Method:
1. Heat 3 tbsp oil in a deep pan.
2. Add cumin and mustard seeds.
3. When they splutter, add onion, ginger, garlic and curry leaves.
4. Fry till brown.
5. Add chilli, turmeric, raisins and chopped vegetables.
6. Add salt, sugar and garam masala.
7. Add 2 1/2 cups of water and cook till vegetables are soft.
8. Garnish with coriander leaves.
9. Serve with puris or rotis.

Tip: In South India, Coconut paste is also added.
