Ingredients

  • 200 gms Chicken Fillets (finely sliced, fat trimmed)
  • 200 gms Plain Noodles
  • 1 1/2 tsp Oil
  • 1 Onion (small, finely sliced)
  • 1 clove Garlic (finely sliced)
  • 1 cm Ginger (grated)
  • 2 tbsp Sweet Chilli Sauce (recipe here)
  • 3 tsp Fish Sauce
  • 1/4 cup Coriander Leaves (chopped)
  • 2 to 3 tbsp Green Peas (shelled, boiled)

Optional:

  • 2 Spring Onions (chopped)
  • 1 Button Mushrooms (chopped)
  • 2 tbsp Carrots (chopped)
  • 2 tbsp Capsicum (chopped)
  • 1/2 tsp Red Chilli Flakes
  • 3 tsp Peanuts (crushed)
  • Lettuce (few, shredded)

Instructions

  • Cook the noodles as per packet instructions (or in a pan of slightly salted water for 4 to 5 minutes).
  • Stir once and drain well.
  • Keep aside.
  • Heat oil in a pan ove medium flame.
  • Saute the onions for a minute or until soft.
  • Add the ginger, garlic and cook for 20 seconds.
  • Add the chicken and cook for 5 minutes or until cooked.
  • Add the peas, carrots, spring onions, mushrooms, capsicum, red chilli flakes, lettuce, chilli sauce, fish sauce, noodles and stir well.
  • Stir-fry for 2 to 3 minutes.
  • Add the coriander leaves and peanuts. Stir again.
  • Serve warm.
