Fried Rice Noodles

Ingredients:
Rice Noodles – 500 gms
Chicken – 125 gms, cooked and shredded
Chicken Stock – 3/4 cup
Shrimps – handful, peeled and deveined
Onion – 1, chopped
Bamboo Shoots – handful, sliced
Leeks – 50 gms, chopped
Celery – 1 stalk, chopped
Oil – 1/4 cup
Soya Sauce – 4 tsp
Salt and Pepper to taste

Method:
1. Soak the noodles in hot water for 10 minutes.
2. Drain and spread out to cool.
3. When cool, add 2 tblsp of oil in a frying pan and stir-fry the noodles.
4. Remove.
5. Pour the rest of the oil into the pan.
6. Stir-fry the onion.
7. Then add the chicken, shrimps, bamboo shoots, leeks and celery.
8. Fry till the vegetables are tender but crisp.
9. Pour in the chicken stock.
10. Add salt, pepper and soya sauce.
11. When it begins to boil, add the noodles.
12. Cook for 1 to 2 minutes.
13. Serve hot.
