Szechuan Chilli Chicken

Ingredients:
Chicken – 350 gms, boneless, breasts, cubed
Salt – 1 tsp
Egg – 1, white only
Oil – 5 tbsp
Cornflour – 1 1/2 tbsp
Ginger – 2, fresh, peeled, sliced
Dried Chillies – 2, small, chopped
Chillies – 2, fresh, seeded, finely chopped
Green/Red Peppers – 2, seeded, cubed
Soy Sauce – 2 tbsp
Wine Vinegar – 2 tbsp

Method:
1. In a large bowl place the chicken breasts and add salt, egg white, 1 tbsp oil and cornflour.
2. Rub the mixture evenly over the chicken breasts to form a thin coating.
3. Heat the remaining oil in a kadai.
4. Add the ginger and both the dried chillies.
5. Stir fry for 1 minute.
6. Add the chicken breasts and cook till lightly browned.
7. Stir in the red/green peppers, soy sauce and wine vinegar.
8. Fry for another 2 minutes.
9. Serve immediately with steamed rice.
