Yellow Pumpkin Payasam


Yellow Pumpkin
Yellow Pumpkin – 1 cup, grated
Milk – 1 litre
SUgar – 1 1/2 cups
Ghee – 2 tblsp
Cashewnuts – few, fried in ghee
Raisins – few, fried in ghee
Vanilla Essence – 2 drops

1. Heat ghee in a pan.
2. Fry the cashewnuts and raisins. Remove and keep aside.
3. To the same pan, add the grated pumpkin.
4. Saute for 2 to 3 minutes.
5. Bring the milk to a boil and add the pumpkin.
6. Simmer for a minute or two.
7. Add sugar and simmer until reduced by half.
8. Add vanilla essence, cashewnuts and raisins.
9. Gently mix and serve.
