Dahi Bhindi (Lady's Finger in Curd Gravy)

Bhindi - Dahi Bhindi (Lady's Finger in Curd Gravy)

Lady’s Finger / Bhindi – 250 gms
Tomato – 1, finely chopped
Pepper Powder – 1 tsp
Cardamom Powder – 1/2 tsp
Green Chillies – 2, chopped
Onion – 2, finely chopped
Cumin Seeds – 1 tsp
Garam Masala Powder – 1 tsp
Red Chilli Powder – 2 tsp
Turmeric Powder – 1/4 tsp
Ginger Garlic Paste – 1 tsp
Curd – 1 cup, whisked
Cumin Powder – 1 tsp
Coriander Leaves – few, chopped
Oil – 1 tblsp
Ghee – 1 tblsp
Salt as per taste

1. Slit the bhindi’s lengthwise and remove the seeds.
2. Mix little red chilli powder, turmeric powder, cumin powder, pepper powder, garam masala powder and salt.
3. Rub this on the bhindi’s and keep aside.
4. Heat oil in a pan.
5. Stir-fry the bhindis for 2 minutes and remove.
6. Heat ghee in a pan.
7. Add cumin seeds, ginger garlic paste and stir well.
8. Add the onions, tomatoes, green chillies and cook for a minute.
9. Add the remaining masala powders and stir-fry.
10. Add the reserved bhindis and stir well to mix.
11. Switch off the flame and add the curd.
12. Mix well and place it over low flame.
13. Simmer for 2 minutes and remove.
14. Garnish with coriander leaves.
15. Serve hot.
