Vendaikkai Nuvala Podi

Ingredients:
Tamarind Extract – 1 cup
Bhindi (Lady’s Finger/Okra) – 500 gms
Turmeric Powder – 1/4 tsp
White Sesame Seeds – 3 tblsp, roasted and ground to a fine powder
Salt as per taste

For Tempering:
Oil – 2 tblsp
Mustard Seeds – 1 tsp
Cumin Seeds – 1 tsp
Asafoetida Powder – 1/2 tsp
Dry Red Chilli – 1, halved
Urad Dal – 1 tsp
Curry Leaves – few

Method:
1. Top and tail the bhindi’s and cut into 1/2 inch pieces.
2. Heat oil for tempering in a frying pan.
3. Add the remaining tempering ingredients and fry.
4. When mustard seeds start spluttering, add the chopped bhindi, turmeric and tamarind.
5. Cover pan and cook till bhindi are tender and all moisture is absorbed.
6. Add powdered sesame seeds and salt.
7. Stir fry over high heat till well mixed and dry.
8. Serve hot with plain rice.
