Ingredients:
Raw Cashew Nuts – 1 cup
Potato – 1, medium, peeled, diced
Coconut Milk – 1 cup
Onion – 1, small, diced
Red Chillies – 1, seeds removed and finely chopped
Turmeric Powder – 1/2 tsp
Coriander Powder – 1/2 tsp
Cardamom Powder – a pinch
Garlic – 1 clove, minced
Ginger – 1/4 tsp, minced
Oil – 1 tblsp
Salt as per taste
Cinnamon – 1, small stick
Coriander Leaves – for garnish
Method:
1. Heat oil in a pan.
2. Fry the onions, red chillies, turmeric powder, coriander powder, cardamom, ginger, garlic and cinnamon for a minute or two.
3. Add all the other ingredients (coconut milk at the last).
4. Bring to a boil.
5. Reduce flame and simmer for 15 minutes or until the curry becomes thick.
6. Garnish with coriander leaves.
7. Serve hot with rice.
