Ingredients:
- Rock Melon – 1/2
- Honeydew Melon – 1/2
- Pink Watermelon – 1 wedge
- Mango – 1
- Lychees – 450 gms (canned)
- Lychee Liqueur
- Juice of 2 Limes
- Mint Sprigs – for garnish
Method:
- Peel the rock melon and honeydew melon.
- Scoop out the seeds and cut into large chunks.
- Trim the skin and white rind from the watermelon wedge.
- Cut the flesh into chunks.
- Peel the mango and cut the flesh into chunks.
- Drain lychees and reserve the liquid.
- Combine the melon, mango and lychees in a big bowl.
- Mix the reserved liquid with liqueur and lime juice.
- Pour this over the salad.
- Cover and chill for 20 minutes.
- Garnish with mint sprigs before serving.
