Ingredients:
- Zucchini – 1, grated
- Button or Oyster Mushrooms – 4 to 5, thinly sliced
- Zest of 1/2 Lemon
- Fresh Lemon Juice – 2 tsp
- Fruity Olive Oil – 2 tblsp
- Coriander – 1/4 tblsp, chopped
- Basil – 1/4 tblsp, chopped
- Parsley – 1/4 tblsp, chopped
- Salt
- Black Pepper – ground
Method:
- Combine the zucchini and mushrooms in a bowl.
- Add the lemon zest and juice, olive oil, basil, parsley and coriander.
- Season to taste with salt and pepper.
- Serve.
