Parsley and Cilantro Oil



  • Parsley Leaves – 1/2 cup
  • Cilantro Leaves – 1/2 cup
  • Canola Oil – 1 cup


  1. Wash and drain the leaves.
  2. Bring a saucepan of water to a boil and submerge the leaves.
  3. Blanch for 5 seconds.
  4. Drain the leaves and dry well.
  5. Heat the oil in a saucepan.
  6. Bring to nearly boiling and let it simmer for a minute or two.
  7. Combine the warmed oil and leaves in a food processor.
  8. Process until well combined.
  9. Pour through a cheesecloth and strain into a clean jar.
  10. Cover and refrigerate.
