Istoo_Potato Stew
Potatoes – 4, peeled and cubed
Onion – 2, chopped
Green Chillies – 15 to 20, slit lengthwise
Ginger – 3 two inch pieces, chopped
Black Pepper Powder – 2 tsp
Salt – 2 tsp or as per taste
Coconut Milk – 2 cups, thick
Curry Leaves – handful
Oil – 3 to 4 tblsp

1. Heat a pan over moderate heat.
2. Add the cubed potatoes, chopped onions, green chillies, ginger, pepper powder, salt and 1 1/2 cups of water.
3. Cook till potatoes are tender.
4. Add the coconut milk and curry leaves.
5. Cook for a minute.
6. Heat oil in a separate pan and pour it over the potato stew.
7. Mix well and serve hot.
8. Best served with appam or idiyappam.
