Ingredients:
Whole Wheat Pasta – 2 cups/500 gms, cooked
Chicken Breast – 350 gms, thinly sliced
Extra-Virgin Olive Oil – 3 tblsp
Garlic – 3 cloves, crushed
Broccoli Florets – 2 cups
Asparagus Spears – 1 cup
Carrot – 1 cup, shredded
Cherry Tomatoes – 2 cups, halved
Spinach – 1 cup, shredded
Basil – 1/4 cup, chopped
Red Chilli Flakes – 1/4 tsp
Sea Salt – 4 tsp
Ground Black Pepper as per taste
Method:
1. Heat oil in a large pan.
2. Saute the garlic for a minute.
3. Add the broccoli florets and asparagus spears.
4. Saute for another 5 minutes.
5. Add carrots, tomatoes, chicken slices and spinach.
6. Saute until the spinach begins to wilt.
7. Remove from heat.
8. Add basil leaves, chilli flakes, salt, pepper and cooked pasta.
9. Toss well and serve warm.
