Ingredients:
Litchis (Lychees) – 15, peeled
Carrot – 1 cup, grated
Cream Curd – 400 gms, thick
Sugar – 2 tsp
Salt – 1/4 tsp or as per taste
For Tempering:
Red Chilli Powder – 1/2 tsp
Mustard Seeds – 1/2 tsp
Curry Leaves
Oil – 2 tsp
Method:
1. Mix the curd and sugar in a blender.
2. Blend and transfer to a serving bowl.
3. Add salt and grated carrots..
4. Place the litchis over the curd.
5. Heat oil in a pan.
6. Fry the mustard seeds till it splutters.
7. Add the red chilli powder and curry leaves.
8. Fry for 20 to 30 seconds and pour over the curd.
9. Serve chilled.
