Pani Santula (Orissa style Mixed Vegetables)

Ingredients:
Badis – 4 (these are made from urad dal)
Potato – 1
Pumpkin – 1, small
Mustard Seeds – 1/4 tsp
Garlic Cloves – 4
Salt as per taste
Brinjal – 1
Drumstick – 1
Red Chilli – 1
Oil – 1 tblsp
Water – 1 1/2 cups
Colocasia – 1, small

Method:
1. Fry the badis in one tsp oil and keep aside.
2. Peel and cut the vegetables into long and thick pieces.
3. Boil potatoes till half done.
4. Add all the other vegetables and salt.
5. Cook till done.
6. Add badis and remove after 4 minutes.
7. Heat oil and fry the mustard seeds, garlic and chillies for 30 seconds.
8. Pour in the cooked vegetables and simmer for 3 minutes.
9. Serve hot.
