Hari Pav Bhaji Recipe

Ingredients:
Carrots – 2, peeled and grated
Spinach – 3 cups, finely chopped
Capsicum – 2, finely chopped
French Beans – 10 to 12, finely chopped
Bottle Gourd – 1 1/2 cups, peeled and grated
Green Chilli Paste – 1 tbsp
Butter – 2 tbsp
Ghee – 1 tbsp
Cumin Seeds – 1/2 tsp
Asafoetida – 1/3 tsp
Ginger Garlic Paste – 1 tbsp
Coriander Leaves – 3 to 4 tbsp
Onion – 1, finely chopped
Pav Bhaji Masala – 3/4 tbsp
Juice of 1 Lemon
Salt to Taste

To Serve:
Wheat Bread Buns – 6
Butter – 2 tbsp

Method:
1. Heat the butter and ghee.
2. Add cumin seeds, after they crackle add asafoetida.
3. Add ginger garlic paste and fry for 5 seconds.
4. Add onion and fry for 5 minutes.
5. Add French beans, bottle gourd, capsicum, carrots and salt.
6. Cover and cook for 10 minutes.
7. Add all the remaining ingredients, cover and cook for 5 minutes.
8. Split the buns horizontally into 2 parts, brush with little butter and cook on a hot griddle on both sides till done.
9. Serve hot with buttered buns.
