Spicy Cluster Beans

Cluster Beans – 1/4 kg
Mustard Oil – 200 ml
Asafoetida – 1/4 tsp
Ajwain – 1/2 tsp
Ginger – 1 tsp, chopped
Amchur (Dry Mango) Powder – 1 tsp
Salt – 1/2 tsp
Red Chilli Powder – 1/2 tsp

1. Cook beans in boiling water till tender-crisp.
2. Drain, cool and de-vein.
3. Heat oil in a pan.
4. Fry asafoetida, ajwain and ginger for 2 minutes.
5. Add the beans.
6. Cover and cook on low heat for 15 minutes.
7. Remove from heat.
8. Add salt, amchur powder and red chilli powder.
9. Mix well.
10. Serve with plain rice.
