Baby Brinjal Rice

Basmati Rice – 2 cups, cooked
Baby Brinjal – 200 gms
Red Chilli – 4
Mustard Seeds – 1 tsp
Urad Dal – 1 tsp
Channa Dal – 1 tsp
Asafoetida Powder – 1/2 tsp
Curry Leaves – 1 tsp, chopped
Coriander Seeds – 2 tsp
Turmeric Powder – 1/2 tsp
Coconut – 1/2 cup, grated
Oil – 1/2 cup
Salt – 2 tblsp

1. Pour a little oil in a pan and fry urad dal, coriander seeds and red chilli.
2. Powder them smoothly.
3. Pour oil in a pan and fry mustard seeds, asafoetida and curry leaves.
4. Add chopped baby brinjal in pan along with turmeric powder and salt.
5. Stir well.
6. When brinjal is half-fried, add the powdered masala.
7. Cook until it is fully fried.
8. Add rice with the fried brinjal pieces and stir well.
9. Serve hot.
