Frequently Asked Questions

Can I make the dough ahead of time?

Yes. You can make the dough up to 6 hours in advance. Keep it covered with a damp cloth at room temperature. This actually helps the dough rest and makes rolling easier.

Can I use frozen peas?

Without a doubt. Thaw them completely and pat dry before grinding. Frozen peas work just as well as fresh ones and are often more convenient.

How do I know if the oil is at the right temperature?

Drop a small piece of dough in the oil. If it rises to the surface quickly and begins to sizzle, the oil is ready. If it browns too quickly, the oil is too hot.
