Cauliflower, Potato and Green Peas Curry

Ingredients:
Cauliflower – 1, small, cut into 1 inch florets
Vegetable Oil – 1 tblsp
Onion – 1, thinly sliced
Garlic Clove – 1, minced
Potatoes – 2, diced
Green Peas – 1 cup
Tomatoes – 2, ripe, diced
Red Chilli Powder – 1/2 tsp
Cumin – 1/2 tsp, ground
Coriander – 1/2 tsp, ground
Brown Sugar – 1/2 tsp
Salt – 1/2 tsp
Water – 1 cup
Plain Yogurt – 1/4 cup
Coriander Leaves – 2 tblsp, chopped

Method:
1. Steam cook the cauliflower for 5 to 7 minutes until tender.
2. Keep it aside.
3. Heat oil in a large pan.
4. Saute the onion and garlic for 3 minutes.
5. Add the potatoes and peas.
6. Cook for 5 minutes over medium heat until potatoes are tender.
7. Add the tomatoes, red chilli powder, cumin, coriander, brown sugar, salt and steamed cauliflower.
8. Add 1 cup of water and simmer over low heat for 5 minutes.
9. Remove the pan from heat.
10. Garnish with yogurt and coriander leaves.
11. serve hot.
