Sesame Paneer Rice

Rice – 1 cup
Oil – 2 tblsp
White Sesame Seeds – 2 tblsp
Ginger – 2 inch piece, minced
Coriander Leaves – 1/2 cup, chopped
Green Chillies – 2 to 3, minced
Paneer – 1/2 cup
Salt – 1 tsp

For Garnish:
Coriander Leaves – 1 tblsp, chopped

1. Wash rice and soak in water for 15 minutes.
2. Heat oil in a heavy based pan over moderate heat.
3. Add sesame seeds, ginger, coriander leaves and chillies.
4. Stir till well blended.
5. Add paneer and mix well.
6. Drain rice and add to pan.
7. Stir till translucent.
8. Mix in salt and 2 cups of water.
9. Cook rice for 10 to 15 minutes till water is absorbed and rice is tender.
10. Stir lightly.
11. Garnish with coriander leaves.
12. Serve hot.
