Ingredients

  • 1 cup Paneer (grated)
  • Oil or Ghee to shallow fry

For the Filling:

  • 1 tbsp Carrots (finely graetd)
  • 1 tbsp Peas (boiled and mashed)
  • 1 tbsp Onions (finely chopped)
  • 1 tbsp Coriander Leaves (finely chopped)
  • 1 tsp Green Chillies (finely chopped)
  • Salt to taste
  • 1/2 tsp Cumin Powder
  • 1/2 tsp Red Chilli Powder
  • 1/4 tsp Garam Masala
  • 1/2 tsp Chaat Masala

For the Dough:

  • 2 cups Wholewheat Flour
  • 2 tbsp Ghee/Oil
  • Salt to taste
  • Water as required

Instructions

Method:

  • Put the paneer in a bowl along with the rest of the filling ingredients and mix well.
  • Season with salt, cumin powder, chilli powder, garam masala and chaat masala and stir to make a firm mixture.
  • Put all the ingredients for the dough in a bowl, adding enough water to knead into a firm dough.
  • Divide into 8 balls and roll out each ball into a small rub.
  • Rub the surface with ghee/oil, place 1 tblsp filling in the centre, fold the roti over the filling into a square or round shape.
  • Carefully roll it out with a rolling pin on a floured surface to make a paratha.
  • Heat the oil/ghee on a tawa.
  • Cook the paratha on both sides.
  • Dribble a little oil/ghee around the sides as required and cook till golden.
  • Serve hot.

Can I use store-bought paneer?

Yes. Just make sure to grate it while it’s cold. Fresh paneer works best, but packaged paneer is fine too. Let it come to room temperature before grating.

How do I prevent the filling from coming out while rolling?

Don’t overstuff the paratha. Seal the edges well and use light pressure while rolling. Dust with flour if needed.

Can I make these without vegetables?
