Lazeez Paneer Paratha Recipe

Paneer – 1 cup, grated
Oil or Ghee to shallow fry

For the Filling:
Carrots – 1 tblsp, finely graetd
Peas – 1 tblsp, boiled and mashed
Onions – 1 tblsp, finely chopped
Coriander Leaves – 1 tblsp, finely chopped
Green Chillies – 1 tsp, finely chopped
Salt to taste
Cumin Powder – 1/2 tsp
Red Chilli Powder – 1/2 tsp
Garam Masala – 1/4 tsp
Chaat Masala – 1/2 tsp

For the Dough:
Wholewheat Flour – 2 cups
Ghee/Oil – 2 tblsp
Salt to taste
Water as required

1. Put the paneer in a bowl along with the rest of the filling ingredients and mix well.
2. Season with salt, cumin powder, chilli powder, garam masala and chaat masala and stir to make a firm mixture.
3. Put all the ingredients for the dough in a bowl, adding enough water to knead into a firm dough.
4. Divide into 8 balls and roll out each ball into a small rub.
5. Rub the surface with ghee/oil, place 1 tblsp filling in the centre, fold the roti over the filling into a square or round shape.
6. Carefully roll it out with a rolling pin on a floured surface to make a paratha.
7. Heat the oil/ghee on a tawa.
8. Cook the paratha on both sides.
9. Dribble a little oil/ghee around the sides as required and cook till golden.
10. Serve hot.
