Flaky Fish

 500 gm lean fish
 1 inch piece sliced ginger
 4 green onions, sliced
 2 tbsp brandy
 1 tbsp soya sauce
 2 tbsp oil
 1 tbsp sugar

1. Marinate the fish with ginger, brandy and onion for half an hour.
2. Steam till cooked.
3. Heat a pan, add the steamed fish with the liquid and mash well over low heat till dry.
4. Add the remaining ingredients and cook till the fish becomes flaky and golden.
