A tasty and delicious burger with Beetroots.
Beetroot Burger

Beetroot – 3/4 cup, grated
Carrot – 1/3 cup, grated
Oats – 1/4 cup
Onion – 2 to 3 tblsp, chopped
Parsley – few
Coriander Leaves – few
Thyme – 1 sprig
Corn Flour – 2 tblsp (adjust as required)
Garlic – 1 clove, crushed
Salt as per taste
Black Pepper Powder – little
Oil – 1 1/2 tsp
Dijon Mustard as required
Burger Buns – 2 or 3
Tomatoes – 2, slices
Onions – 1 or 2, sliced
Cucumber – 1, sliced (optional)
Lettuce Leaves – few, chopped

1. Mix the beetroot, carrot, oats, onions, garlic and corn flour.
2. Add the parsley, coriander leaves, thyme, salt, pepper powder and mix well.
3. Keep aside for 10 minutes.
4. Make medium balls and flatten them into burger patties.
5. Heat oil in a frying pan over low flame.
6. Cook the patties for 5 to 8 minutes on each side or until golden and crisp.
7. Halve the burger buns and place them on a flat surface.
8. Spread some mustard and add some lettuce leaves.
9. Place one of the cooked patties and top up with some more lettuce leaves, onions, tomatoes and cucumber.
10. Sprinkle a bit of pepper powder and cover with the other half.
11. Serve with mint mayonnaise or sauce.
