Ingredients:
Basmati Rice – 1 cup
Ghee – 2 tblsp
Cashewnuts – 2 tblsp
Raisins – 2 tblsp
Tender Coconut Water – 1 cup
Tender Coconut Flesh – 1 cup, finely chopped or coarsely ground
Milk Maid – 1/4 cup
Salt – a pinch
Method:
1. Soak the rice for 15 minutes.
2. Heat ghee in a frying pan.
3. Fry the cashewnuts and raisins for 30 seconds.
4. Remove and keep aside.
5. Add the rice to a pressure cooker.
6. Pour the tender coconut water, coconut flesh, milk maid and salt.
7. Pressure cook till 1 whistle.
8. Remove from flame.
9. Garnish with cashewnuts and raisins.
10. Serve at once.
