Ingredients:
Chicken – 150 gms, cooked, diced
Potatoes – 150 gms, boiled, diced
Mango Chutney – 1 tblsp
Curry Paste – 1 tblsp
Capsicum – 1/2, deseeded, chopped
Onion – 1, sliced
Sunflower Oil – 2 tsp
Tomatoes – 200 gms, chopped
Garlic – 1 clove, crushed
Coriander Leaves – handful, chopped
Method:
1. Heat oil in a pan over medium flame.
2. Saute the onions and capsicum for 2 to 3 minutes or until onions turn light brown.
3. Add the garlic and curry paste.
4. Simmer for a minute.
5. Add the tomatoes. Pour 1 cup of water and bring to a boil.
6. Then simmer for 3 minutes over low flame.
7. Add the chicken and potatoes.
8. Stir well and cook for 2 minutes.
9. Add mango chutney and mix.
10. Garnish with coriander leaves.
11. Serve hot with roti or naan.

That is my favourite chicken curry preparation. So tasty with rice or any kind of Roti.
