Eggless Mayonnaise

Published under: Vegetarian

Ingredients:
Cream – 5 tblsp
Lime Juice – 2 tblsp
French Mustard – 1 tsp
Sugar – 1 tsp
Olive Oil – 6 tblsp
Salt as per taste

Method:
1. Blend all the ingredients in a blender until it reaches a smooth consistency.
2. Transfer it to an airtight container.
3. Keep it in the fridge and use as required.

Hi Pooja,

Just a quick feedback. If you can edit the method it will be great if you can edit the first line saying ” mix all the ingredients and then add hot milk on it” as it is very vague what you have mentioned and learners like me will make a mistake of add cold milk lol!!! thanks…

Hi frenz…….try this recipe for eggless mayonnaise.Take half cup milk mix one spoon cornflour add one cup milk microwave for 3 to 4 mins.Let it cool add salt and pepper and its ready to eat.

Hi Pooja,

Excellent recipe looks very easy though. I need to ask you few things :

1. you said “Make white sauce with the flour, fat and milk. When cold, add the rest of the ingredients and mix well.”

when you said “fat and milk” I guess you mean fat milk. right ? You also said “When cold, add the rest” so, do we have to add the corn flour in the boiling milk or we can simply blend the fat milk and corn flour with a blender ?

2. Have you tried adding a little lemon juice in it ?

3. The last one do you know any way to preserve it longer than a week ? Just looking for what company’s add to their products to last them longer for months.

Sorry for asking too many queries.

Hi Nitin,

1. Yes. Fat milk is what it is.
and Add the flour when the milk is hot.

2. Lemon juice is something that i have not tried, but you can try. No guarantees on how it will turn out.

3. Since i want it fresh, i make them and keep it. companies use preservatives to last them longer.

hi puja
do not add the flour when the milk is hot. at first you made roux (1spoon fat/ oil + 2 spoon flour/maida) and then its add with very boiled & very warm milk. then u see ur white sauce is ready .
