Ingredients:
Avocados – 2, sliced
Strawberries – 200 gms, hulled, sliced
Balsamic Vinegar – 2 tsp
Spinach Leaves – 100 gms
Juice of 1/2 Lemon
Cashewnuts/Walnuts – 50 gms
Salt as per taste
Water – 100 ml
Method:
1. Transfer the strawberries to a bowl and add the vinegar.
2. Keep aside for 10 to 15 minutes.
3. Soak the cashewnuts in water and grind to a semi-thick paste, adding little water if required.
4. Tranfer the spinach leaves to a bowl.
5. Add lemon juice, salt, avocados and toss well.
6. Add the strawberries and pour the cashew dressing on top.
7. Serve.
