A popular and delicious fried chicken from Chettinad cuisine.
Ingredients:
Chicken – 700 gms
Onion – 1, chopped
Oil – 1/4 tsp
Black Mustard Seeds – 1/4 tsp
Dry Red Chillies – 3 to 4
Urad Dal – 1/4 tsp
Fennel Seeds – 1/4 tsp
Lemon Juice – 2 tsp
Curry Leaves – few
Ginger Garlic Paste – 2 tsp
Rice Flour – 1 tsp
Salt – 1 tsp
Turmeric Powder – a pinch
Method:
1. Cut the thicken into bite-sized pieces.
2. Sprinkle salt and turmeric powder.
3. Rub all over the chicken and keep aside for 10 to 20 minutes.
4. Grind the onions, ginger garlic paste and red chillies to a fine paste. Add lemon juice and rice flour. Mix well.
5. Add this to the chicken and mix well ensuring the chicken pieces are evenly coated.
6. Add curry leaves and mix well.
7. Keep aside for 30 minutes.
8. Heat oil in a frying pan over medium flame.
9. Fry the mustard seeds, fennel seeds and urad dal for 30 seconds.
10. Add the marinated chicken pieces and fry for 15 to 20 minutes.
11. Sprinkle some water and cook until golden brown and crisp.
12. Remove and serve hot with rice.
