Roasted Shrimp Salad with Tomatoes and Olives Recipe

Roasted Shrimp Salad
Shrimps – 225 gms, peeled, deveined
Red Chilli Flakes – 1/4 tsp
Garlic – 1/2 tblsp, finely sliced
Extra-Virgin Olive Oil – 1 tblsp + 1/4 cup
White Wine – 1/8 cup
Cherry Tomatoes – 1/2 cup, quartered
Black Olives – 1/8 cup, pitted, roughly chopped
Parsley – 1/8 cup, chopped
Dill Leaves – 1/8 cup, chopped
Spring Onions – 1/8 cup, chopped
Zest and Juice of 1/2 Lemon
Oregano – 1/2 tblsp
Bread Slices – 2, toasted, rubbed with a garlic clove

1. Heat 1 tblsp of oil in a pan over medium flame.
2. Saute the garlic and add the shrimps.
3. Add salt and pepper and mix well.
4. Add the red chilli flakes and cook for 2 to 3 minutes.
5. Once the shrimps are cooked, pour the white wine and stir well.
6. Remove and transfer to a bowl.
7. Keep aside.
8. Add the tomatoes, olives, parsley, dill, spring onions, lemon zest, lemon juice, oregano and 1/4 cup of oil.
9. Mix well.
10. Place a heapful of one bread slice.
11. Sprinkle some salt and pepper.
12. Cover with the other slice and serve.

Tip: If you do not want to make this a sandwich, omit steps 10, 11 and 12.
