Ingredients:
- Vegetable Oil – 2 tblsp
- Chili Oil – 1 tblsp
- Onion – 1, sliced
- Ginger – 1 one inch piece, grated
- Broccoli – 1 small head, cut into florets
- Carrots – 2, cut into short thin sticks
- Red Bell Pepper – 1, seeded and cut into squares
- Yellow Bell Pepper – 1, seeded and cut into strips
- Snow Peas – 50 gms, trimmed
- Baby Corn – 50 gms, halved
For the Dressing:
- Vegetable Oil – 2 tblsp
- Chili Oil – 1 tsp
- Rice Wine Vinegar – 1 tblsp
- Juice of 1 Lime
- Fish Sauce – 1/2 tsp
Method:
- Heat the oil in a large pan.
- Sauté the onion and ginger for 2 minutes until they start to soften.
- Add the vegetables and stir-fry for 3 minutes, until they have softened slightly.
- Remove from the heat and set aside.
- Mix the dressing ingredients together.
- Transfer the vegetables to a serving plate.
- Drizzle the dressing over.
- Serve immediately.
