Fish Pie

Ingredients:
White Fish – 750 gms, cooked in boiling water and cut into pieces
Carrots – 2, sliced
Butter – 75 gms
Onion – 1, chopped
Curry Powder – 2 tblsp
Flour – 3 tblsp
Green Peas – 75 gms, cooked
Potatoes – 3/4 kg, peeled and cooked in salted water
Coriander Leaves – 1 tblsp
Milk – 5 tblsp
Cheese – 50 gms, grated
Egg Yolk – 1
Salt
Pepper

Method:
1. Reserve the water in which fish was cooked.
2. Melt the butter in a pan.
3. Add the onion and curry powder.
4. Fry till onions become soft.
5. Add the flour and stir over low heat.
6. Remove pan from heat and add 1 1/2 cups of fish stock gently till well blended.
7. Add carrots, peas, salt and pepper.
8. Simmer for 2 minutes.
9. Add the fish pieces with the coriander leaves.
10. Pour into an 8 inch pie dish.
11.Mash the potatoes well.
12. Season with salt and pepper.
13. Add milk and grated cheese. Mix well.
14. Spread this mashed potato mixture over the fish filling.
15. Beat egg yolk with a little water and brush the top of the potato mixture.
16. Bake in a moderate oven till the top turns golden brown.
17. Remove and serve.
