Chicken Mushroom Biryani Recipe

Ingredients:
Chicken Breasts – 2, bonless
Ghee – 1/2 cup
Black Cardamoms – 2
Green Cardamoms – 2
Cloves – 4 to 5
Black Peppercorns – 2 tsp
Bay Leaf – 1
Onions – 2, medium, chopped
Button Mushrooms – 200 gms, quartered
Green Capsicum – 1, large, cut into 1/2 inch squares
Rice – 1 cup
Salt – 1/2 tsp
Black Pepper Powder – 1/2 tsp

For the Marinade:
Yogurt – 2 tblsp, whisked
Salt – 1 tsp
Coriander Leaves – 2 tblsp, minced
Garam Masala Powder – 1 tblsp

Method:
1. Wash chicken and set aside to drain.
2. Cut into bite-sized pieces.
3. Combine the marinade ingredients and rub into chicken.
4. Set aside to marinade for an hour.
5. Heat ghee in a heavy-bsaed pan over moderate heat.
6. Add the whole spices, bay leaf and onions.
7. Fry till the onions turn brown.
8. Add chicken with its marinade and mushrooms.
9. Mix well.
10. Cover pan and simmer over moderate heat for 10 to 15 minutes, till water is released from chicken and mushrooms is almost absorbed.
11. Stir in the capsicum and remove from heat.
12. Wash rice and soak in water for 15 minutes.
13. Place pan with chicken over moderate heat.
14. Drain rice and add to pan.
15. Stir till translucent.
16. Mix in salt and 2 cups of water.
17. Cook rice for 10 to 15 minutes.
18. Sprinkle pepper on top.
19. Serve hot.
