Ingredients:
4 cups raw rice
3/4 cup red gram dal (tuvar dal)
1/2 cup bengal gram dal (chana dal)
1/2 cup black gram dal (urad dal)
2 tbsp coconut gratings
1 tbsp chopped coriander
a handful of shelled peas or fresh mochakottai (optional)
6 cups water
salt to taste
Seasoning:
4 tbsp gingelly oil
1 tsp mustard seeds
2 red chillies (broken into small pieces)
2 tsp roughly powdered pepper-cumin seeds
4-5 green chillies (minced)
a tiny piece ginger (minced)
2 sprigs curry leaves
Method:
1. Clean the rice and dals, mix together and grind to a rava consistency in the dry grinder. Take 2 cups of rava for this recipe, set aside the rest. Do not sieve the rava.
2. Heat oil, add seasonings in the order given adding a pinch of asafoetida as well.
3. When seasonings are done add water, salt, coconut gratings, peas and chopped coriander and set to boil.
4. When water starts to boil, reduce the heat and add rava gradually, stirring all the while. When all of it has been added, cover and allow to cook on SIM for a while.
5. When all the water has been absorbed and the rava has cooked, remove from the fire, transfer onto a plate, allow to cool.
6. When sufficiently cooled, take a handful of uppumav, make into a kozhakattai. Finish all the uppumav this.
7. Steam cook the kozhakattai in an idli cooker (wet the moulds before putting them). Steam cook without weight for 8-10 minutes.
Serve hot with ghee and some coconut chutney.
