Ingredients:
Pasta – 1 cup, cooked as per packet instructions
Tuna – 100 gms, soaked in olive oil (or 1/2 Can)
Green Peas – 50 gms, shelled, blanched
Capsicum – 1/2, finely chopped
Sweet Corn Kernels – 50 gms
Baby Spinach Leaves – 1/2 cup
Raisins – 2 tblsp
Lemon Juice – 2 ts
Parsley – 1/2 tbllsp
Extra-Virgin Olive Oil – 1 tblsp
Method:
1. Mix the tuna, pasta, peas, capsicum, corn, raisins and spinach in a bowl.
2. Toss well until well mixed.
3. In a small bowl whisk together lemon juice, olive oil and parsley.
4. Drizzle over salad and toss gently.
5. Serve at once.
