Ingredients:
Maida – 1 cup
Baking Powder – 2 tsp
Salt – 1/4 tsp
Sugar – 1/2 cup
Oil – 2 tblsp
Milk – 1/2 cup
Egg – 1, beaten
Mangoes – 1/4 cup, finely chopped + 1/4 cup, diced for garnish
Mango Juice – 1/2 cup
Butter
Method:
1. Combine the maida, baking powder and salt in a bowl.
2. Mix well and keep aside.
3. In a separate bowl, mix the sugar, oil, milk, egg, chopped mangoes and mango juice.
4. Slowly add the flour mixture and mix until combined.
5. Grease the cupcake tins with butter and pour the batter in.
6. Place a diced mango piece on top.
7. Place the tray into a preheated oven at 400F/200C.
8. Bake for 15 to 20 minutes or until golden brown.
9. Remove and cool.
10. Serve.
