Ingredients:
Green Mango – 1, peeled, shredded
Red Onion – 1, small, sliced
Tomato – 1, small, seeded, sliced
Cucumber – 1/2, sliced
Kaffir Lime Leaves – 1, finely sliced
Coriander Leaves – 1/2 tblsp, chopped
Lemongrass – 1/2 tsp, chopped
Roasted Peanuts – 2 tsp
Lime Juice – 1/2 tblsp
Sugar – 2 tblsp
Green Chillies – 2, small, finely sliced
Soy Sauce – 2 tblsp
Coriander Leaves – few, chopped, for garnish
Method:
1. Mix all the ingredients in a bowl.
2. Toss well to evenly combine the soy sauce, lime juice and sugar.
3. Transfer to a serving bowl.
4. Garnish with coriander leaves.
5. Serve at once.
