Ingredients:
Cucumber – 250 gms, halved, soft insides scooped out and then cut into 1 inch sticks
Carrot – 150 gms, peeled, cut into 1 inch sticks
Green Chillies – 2, cut into 1 inch strips
Lime Juice – 1/4 cup
Mustard Seeds – 1/2 tblsp, crushed
Turmeric Powder – 1/4 tsp
Asafoetida Powder – 1/4 tsp
Mustard Oil – 1/2 tblsp
Sugar – 1/4 tsp
Salt – 1 tblsp
Method:
1. Combine the cucumbers, carrots and green chillies in a bowl.
2. Add lime juice and salt.
3. Stir to mix well and cover with a lid.
4. Keep aside for 15 to 20 minutes.
5. After 20 minutes, squeeze out any liquid and drain well.
6. Transfer to a bowl.
7. Add mustard seeds, turmeric powder, asafoetida powder, sugar and oil.
8. Mix well until well combined.
9. Serve as a side dish.
