Tomato and Butter Soup Recipe

Tomato Soup
Tomatoes – 5, finely chopped
Onions – 1 cup, finely chopped
Butter – 2 tblsp
Sugar – 1 tsp
Pepper Powder – 1 tsp
Maida – 2 tblsp
Milk – 2 cups
Coriander Leaves – few, handful
Salt as per taste

1. Heat a heavy-bottomed pan over medium flame.
2. Saute the onions and tomatoes for couple of minutes.
3. Add pepper powder, sugar and salt.
4. Pour 3 cups of water and simmer for 10 minutes.
5. Bring to a boil and keep aside to cool.
6. Once cooled, grind to a puree and strain into a bowl.
7. Melt butter in a pan.
8. Add maida and stir.
9. Pour milk into the pan and mix well.
10. Add the strained puree and stir to mix well.
11. Simmer for 2 minutes and remove.
12. Garnish with coriander leaves and small bread pieces.
13. Serve hot.

    Yes, you can def make your own ghee from butter.

    As as substitute for Jaggery, you can use Dark Brown Sugar or Muscovado Sugar or Mexican Piloncillo.

    I live in Mexico is piloncillo or mascabado sugar a good substitute for jaggery? Can I make my own ghee from butter? Thanks
