Wilted Spinach with Currants and Pine Nuts

  • Spinach Leaves – 125 gms
  • Extra-Virgin Olive Oil – 1/4 cup
  • Pine Nuts – 1/4 cup
  • Currants – 1/4 cup
  • Salt
  • Ground Black Pepper


  1. Heat a large non-stick pan.
  2. Add oil , pine nuts and currants.
  3. Stir over medium heat until the nuts are golden and the currants are round and plump.
  4. Add the spinach and stir quickly to coat with the oil.
  5. Season with salt and pepper.
  6. Transfer immediately to a serving dish.
