Ingredients:
Potatoes – 4, medium, boiled and cubed
Oil – 3 to 4 tblsp
Mustard Seeds – 2 tsp
Urad Dal – 2 tsp
Onion – 2, chopped
Green Chillies – 12 to 16, slit
Ginger – 3 two inch piece, chopped
Curry Leaves – handful
Turmeric Powder – 2 tsp
Salt – 2 tsp or as per taste
Method:
1. Heat oil in a pan.
2. Fry the mustard seeds and urad dal.
3. When mustard seeds start spluttering, add the chopped onions, green chillies, ginger and curry leaves.
4. Fry till onions turn translucent.
5. Add turmeric powder and salt.
6. Add the cubed potatoes and 1 1/2 cups of water.
7. Cover pan with a lid.
8. Cook for 15 to 20 minutes over moderate heat.
9. Remove the lid.
10. Transfer to a serving dish.
11. Serve hot.
