Avocado with Walnuts

Avocado – 1, large, stoned, peeled
Lemon Juice – 2 tblsp
Onion – 1, small, finely chopped
Pickled Cucumbers – 3, thinly sliced
Celery – 1 stick, chopped
Walnuts – 75 gms, quartered
Salt – 1 tsp
Black Pepper – 1/2 tsp
Ground Cumin – 1/2 tsp
Red Capsicum – 1/2, small, thinly sliced
Black Olives – 1 tblsp, stoned

1. Cut the avocado into cubes.
2. Place them in a bowl and sprinkle the lemon juice on top.
3. Add the onions, cucumbers, celery and walnuts.
4. Add salt, black pepper and cumin powder.
5. Keep it in a fridge for 30 to 40 minutes.
6. Remove, garnish with slices of capsicum and black olives.
7. Serve.
