Ingredients:
Beetroots – 4
Oil – 2 tblsp
Onion – 1, thinly sliced
Green Chillies – 2, minced
Red Chilli Powder – 1/2 tsp
Salt as per taste
Coconut – 2 tblsp, grated
Method:
1. Peel the beetroots and cut into 1/4 inch pieces.
2. Add the beetroots to a large pan and cover with enough water.
3. Boil for 10 to 15 minutes until tender.
4. Drain and rinse until water runs clear.
5. Heat oil in an another pan.
6. Add the sliced onions, green chillies and saute for 2 to 3 minutes.
7. Add the cooked beetroots, red chilli powder and salt.
8. Cook for 2 minutes over medium heat.
9. Keep stirring from time to time.
10. Garnish with grated coconut.
11. Serve hot or warm or at room temperature.
